#1161 New Zealand Eggplant

Sunday Kitchen #153 New Zealand Eggplant

The 6th of February is called Waitangi Day in New Zealand. It’s kind of New Zealand’s national day so I thought I’d make something in the shape of New Zealand to celebrate. Eggplant.

First I sliced the eggplant then I used a cookie cutter to make the shape of New Zealand.

I got three New Zealands out of this eggplant, but you could get more if made the slices thinner of course.

Then I put the countries in a frying pan with some olive oil and soy sauce and a bit of water.
After about 5 minutes I turned them over, which turned out to be quite tricky because the islands were held together by a very thin piece of eggplant.

And by the time they’d finished cooking the countries had completely fallen apart. But that didn’t really matter because the north and south islands of New Zealand aren’t actually supposed to be joined together.

And they were very tasty anyway.
