Sunday Kitchen #165 Ginger Cookies
Someone in my family has stopped eating gluten, so recently I’ve been doing a bit of cooking with gluten-free flour.
Today I made some ginger cookies.
I put a quarter of a cup of oil into a bowl with:
a quarter of a cup of soymilk
two tablespoons of molasses
and half a teaspoon of vanilla.
I mixed that up and in another bowl, I put:
one and a quarter cups of gluten-free flour
half a teaspoon of baking soda
one teaspoon of ginger
a quarter of a teaspoon of cinnamon
an eighth of a teaspoon of salt
and half a cup of sugar.
I mixed that together and then I added it to the wet stuff.
I put some baking paper on a baking tray.
Then I rolled spoonfuls of the mixture into cookies.
I put them in the oven and baked them at 175 degrees for 15 minutes.
I took them out and put them on a wire rack to cool.
They were pretty tasty.
