Sunday Kitchen #171 Tapioca Pudding
I’d never made anything with tapioca before, so I decided to buy some and try it out.
I made something which was a combination of a recipe I found online and the recipe on the back of the packet.
I put a small can of coconut milk in a pot with a cup of soymilk, quarter of a cup of tapioca and an eighth of a teaspoon of salt and I cooked for about 15 minutes.
Then I added two tablespoons of sugar and a teaspoon of vanilla.
I cut up two bananas and stirred those in.
I wanted to serve it in a small glass dish, but I don’t have any of those, so I tried putting in a glass … but it didn’t look that great because the glass is really too big. Then I tried a small white bowl which I also wasn’t happy with. And finally I settled on a small brown bowl.
I put some sliced almonds on top, then a teaspoon of rum and a few mint leaves.
It was delicious.
