Sunday Kitchen #110 Mashed Potato Peppers


I had this idea to make something with mashed potato and peppers that looked kind of like maki zushi.

So first I made some mashed potatoes.

I cut up some potatoes and boiled them, then put them in a bowl with olive oil, basil, pepper, salt and soymilk and I mashed them.

I cut up some carrots. Then I cut the tops of the green peppers and took out the seeds.

I put some mashed potato inside the pepper, then I put some carrot sticks in, then put some more mashed potato in.

Then I sliced them.

I thought they looked pretty good and they tasted very nice.
