Sunday Kitchen #86 Anko Pancake
I decided to make something inspired by Japanese sweets like dorayaki and imagawayaki.
First I put half a cup of flour into a bowl. Then I added half a cup of oats, a tablespoon of sugar, a teaspoon of baking powder, a tablespoon of oil and half a cup of soymilk.
I thought it needed a bit more liquid so I added a quarter of a cup of soymilk. And then half a cup. Sweet.
Then I put some oil in a frying pan.
And I spooned some of the mixture into little circles.
I put a spoonful of anko on top of each one.
Then I put some mixture on top of the anko.
I turned them over and I cooked them for a few minutes with the lid on to create a kind of oven effect.
